M&M cookies are colorful, fun, and extremely easy. The best part of these cookies is that they can be done in one bowl and mixed by hand.

M&M Cookies are so colorful and fun. They’re perfect for birthday parties, giving as gifts, or just making for the heck of it. These particular M&M cookies are soft and chewy. They can stand on their own, but are perfect for dunking in a tall glass of milk or hugging either side of a big scoop of vanilla ice cream. The best part of these cookies is that they can be done in one bowl and mixed by hand.

Here's What You Need:

  • 1/2 cup (1 stick) unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup (packed) brown sugar
  • 1 large egg (room temperature)
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cup all-purpose flour
  • 1/4 cup powdered milk (you can use pudding mix)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup mini M&M's

Here's What You Do:

  1. Heat oven to 350 F degrees. Prepare a baking sheet with parchment paper and cooking spray, or a Silpat if you have one.
  2. In a large bowl mix together butter, sugars, egg, and vanilla until thoroughly combined.
  3. Add to the bowl the flour, powdered milk, baking powder, baking soda, and salt. Mix until dough develops, this can be done with a hand mixer, a stand mixer, or simply by hand.
  4. Fold in M&M's.
  5. Using your hands or a small scooper, make 2-tablespoon sized balls and roll them between your hands. Space them a few inches apart as they will spread. Gently flatten them and bake them for 10-12 minutes. (I cook mine for 10 minutes and 30 seconds)
  6. Allow cookies to cool on the pan for at least 5 minutes before moving to a cooling rack to finish.

Yum M&M Cookies…

I don’t know what’s happening with the weather in NYC. For the whole winter it was just drizzly and sort of, not really, cold. Now that Spring is supposed to be here, it’s 30 degrees outside, with snow and sleet, and more and more rain.  As NYC apartment dweller will attest, it’s miserable. Some of us have play rooms (giant (sometimes) rooms full of broken used toys), but even those can get boring and over-crowded. Our building has one, but you have to pay for it, just like our tiny swimming pool. Not worth it.

 

It makes me long for better days, brighter days, warmer days, days that I spent in Florida a few weeks ago…

But yes, we went to Epcot and Universal Studios Orlando a few weeks ago. It was amazing and the weather was incredible, although maybe slightly too hot for my polar bear baby who loves the cold.

I never remember to take all the pictures I want before eating food, but here are my suggestions for things to eat while at Universal Studios and part of Epcot.

Harry Potter World:

Butterbeer: not my favorite, but definitely a must try. It basically tastes like a butterscotch cream soda. They serve it a bunch of different ways: normal, frozen, and even hot.

Pumpkin Juice: this was really good. It tasted like a blend of pumpkin and apricots with pumpkin pie spices mixed in. Refreshing, but very sweet.

Fudge: so many cool flavors, you just have to try all of them.

Ice cream: my favorite was the sticky toffee pudding flavor.

Fisherman’s Pie at the Leaky Cauldron: creamy, flaky, and slightly spicy. It was delicious.

Fish and chips at the Leaky Cauldron: my British mother said these were exactly like the ones she had growing up in England.

Sticky Toffee Pudding at the Leaky Cauldron: the best dessert I have ever had. Soft, caramelized, sticky, and sweet. It was incredible.

They also have a fun collection of drinks at the Leaky Cauldron.  Every single one is delicious and different. But the

Fishy Green Ale at the Leaky Cauldron: definitely took the cake. At the bottom are these blue tapioca balls that burst in your mouth like fish eggs. Tasty, but very strange, and very cool.

Pumpkin pasties: are basically pumpkin pie empanadas. I wasnt super impressed with them, and wish I had saved for something else.

Bubba Gump’s Shrimp Co.: everything is delicious here, but their bread pudding was to die for. I would’ve just eaten that all night if I could have.

My husband recommends their jambalaya. Be warned, it’s spicy.

Epcot:

Morocco: Marrakesh Restaurant: the baklava is the single best I have ever had in my life. They will bring you three to try and all are excellent. This restaurant also has live entertainment including bands and belly dancers.

England: the fish and chips here were my very favorite. My mother said they weren’t very accurate, but I didn’t even care. The fish was plump and fried golden brown and the fries were perfection.  They serve it up with tartar sauce and malt vinegar. So good.

France: We got a range of desserts here, each as tasty as the first. My favorite was a puff pastry tart with a golden custard and cherries inside. It was remarkable, but I don’t know what it was called because I was busy saving a table when it was bought.

We’re going back as soon as we can to try so much more. If you haven’t been, you need to go, it’s truly an amazing experience.
